Back to school but not any school! I got to be a Lavazza Coffee student for a day at their new training center in Zürich, and get immersed in the fabulous and tasty world of coffee. I must confess that I’m still a novice in this area. I just started drinking coffee a year ago and my palate hasn’t quite developed yet to the taste of coffee but I’m working on it!

Coffee in the Western world is like tea in the Middle-East. It brings people together for convivial drinking. Also perfect excuse to sit outside on a beautiful day and watch people go about their day. It’s more than fulfilling a need, it’s a ritual, a cultural statement.

Lavazza and Coca Cola Switzerland just opened their Swiss training center. Considering that 90% of the population here consumes coffee daily, it was a wise decision. This center is not only for professional baristas but also for people like you and me who are interested in understanding and perfecting the art of making delicious coffee.

Mery Express Recipe by Dennis Zoppi

INGREDIENTS:

  • 3 teaspoons of tomato juice
  • 10 ml of Ancho Reyes (distilled paprika and pepper)
  • 8 ml of Lavazza ¡Tierra! Espresso 100% Arabica Brasile
  • Salt and pepper

ICE TOOLS:

  • 2 shaker tins
  • 1 strainer

PREPARATION:

  • Pour ingredients to fill half a tin, together with ice and blocking it with the strainer.
  • Throw from one tin to the other 3 – 4 times. The strainer allows to ice to stay in place, avoiding spillings and sprays, and allows the drink to incorporate oxygen and chill. Serve cold.
  • Shake Place all ingredients (except for the foam) in the shaker, with ice.
  • Shake and pour in a cup.

FOR THE FOAM:

  • Prepare on the side by placing a 1/4 teaspoon of sugar ester, 2 drops of pumpkin syrup and 100ml of vodka in a container.
  • Foam up with the help of a milk frother and place on top of drink.

You can pair it with nocciole/mandorle or truffle potato chips
